About
The rapidly growing PM Hotel Group had recently purchased the former Omni Hotel in Old Town Philadelphia, a 152 key property. Midway through a total design upgrade to the Marriott Renaissance brand, they reached out to HPI to assess the local market and propose an appealing, competitive, and financially feasible a la carte food and beverage program that met brand standards and held the potential for off-street patronage.
Challenge
Given the constraints of the existing architectural design, and ownership’s financial objectives, we were tasked to develop a coherent collection of guest experiences that were executable within the limitations of the allocated space, the facility’s infrastructure, and the competitive landscape.
Solution
Employing the unique HPI Five Point analysis, we developed and presented a series of options all of which provided a variety of guest experiences that were tiered in their duration and price. Upon review ownership selected Franklin Social, an updated take on a bistro, named after the famous founding father and Francophile, Ben Franklin; a coffee and juice bar, and a differentiated whisky bar. Subsequently, we helped the team through the design development phase, coordinated with the kitchen and equipment firm, and provided complete concept detail from menu creation to service protocols and standards culminating in a hand-off to management for a successful opening.
