Agricola was named one of the Top 10 New Restaurants in the US in 2014, shortly after opening in Princeton, NJ. It’s since become a fixture in the community and continues to make all the top restaurant lists in the Garden State.

Challenge

Years before opening Agricola, proprietor Jim Nawn was contemplating how to best enter the restaurant landscape in Princeton and needed to gain a solid understanding of the local market and its unique dynamics. He sought a team who could partner with him from the initial concept idea all the way to opening.

Solution

HPI was engaged as part of the concept and development team from day one. Our initial market study helped assess the feasibility of different opportunities and informed the overall concept positioning. From there, we created an integrated, customized project road map for Agricola that would guide them from idea to opening. HPI was actively involved in concept development, operationalizing the Agricola brand promise, aligning the concept with the budget, and forecasting financial projections.
Ultimately HPI connected a market-relevant concept idea for Agricola with operational systems and facilities to support a thoughtful guest experience within a financially viable framework.
